Description

Ricotta在義大利文裡的意思是二次加熱，鮮奶經過第一次的加熱製作成起司，剩下的乳清再加熱一次，使裡面的固體成份浮出表面，然後將這些凝乳碎塊裝進模型裡成型即為ricotta起司。帶有微酸的鮮奶，口感鬆軟入口即化，脂肪量低質地清爽不膩口。

用途相當廣泛，是做傳統菠菜義大利麵餃、千層麵必備，也能做甜點如起司蛋糕、起司捲等，或混和橄欖油與香草作為麵包沾醬，搭配蜂蜜與果醬做為開胃小點也是很棒的選擇。
